Ah, St Patrick’s Day. Green beer, shamrock luck and a pinch or two because everyone’s Irish for a day. With my new Power Pressure Cooker XL, I wanted to make a quick, authentic St Patty’s day Corned Beef and Cabbage dinner. I searched high and low for a quick, easy pressure cooked St Patty’s Day dinner. There was a lot of disagreement, so I took the best ideas and came up with a perfectly cooked meal. Our Power Pressure Cooker XL did the job easy peasy. Tender Corned Beef, Tasty Beer Braised Cabbage, tender Red Potatoes and Carrots round it all out. We added a pint of Guinness for the perfect St. Patrick’s Day feast!
Life is so interesting every day. As we are completing our move to Grand Lake and getting ready for the summer season, things are so hectic it’s easy to forget some of the reasons why we have decided to leave the big city for high mountain living. Well, today we have been reminded. My mom is in Colorado to celebrate the graduation of my nephew Scott from Western State in Gunnison, CO.
Time to think about Christmas eve menus, the family Christmas party will be at our daughter’s house this year and Steve and I are in charge of appetizers. I like to use one fruit for several quick and easy dishes and this year I choose strawberry’s.
